Spanish omelette

  Spanish omelette Get recipe Make an omelette inspired by the Catalonian way, a classic dish made simple with only five ingredients Ingredients 500g  new potatoes 1  onion,  preferably white 150ml extra-virgin olive oil 3 tbsp chopped  flat-leaf parsley 6  eggs Method STEP 1 Scrape the new potatoes or leave the skins on, if you prefer.   Cut  them into thick slices.  Chop  the onion. STEP 2 Heat the extra-virgin olive oil in a large frying pan , add the potatoes and onion and stew gently, partially covered, for 30 mins, stirring occasionally until the potatoes are softened. Strain the potatoes and onion through a  colander   into a large   bowl  (set the strained oil aside). STEP 3 Beat the eggs separately, then stir into the potatoes with the parsley and plenty of salt and pepper. Heat a little of the strained oil in a smaller pan. Louvaine's Futomaki Fillings - Shitake, Oboro, Egg, Kampyo, Lotus root, Burdock and Sushi Rice!

From Louvaine's home to ours.  She would make futomaki with her friends together to celebrate life. Get Recipe Making Sushi (futomaki) Sushi rice (makes 10 rolls) (Fraser Valley Japanese United Church)    6 cups plain rice     6 ½  cups water Vinegar solution :     2/3 cups rice vinegar      2/3 cups sugar      1 tbsp mirin       1 tsp salt Rice:   Cook in rice cooker or: Put rice and water in a heavy bottomed Saucepan.  Bring to a boil.  Cover the sauce pan and let simmer      10-20 minutes until just tender (or until the water appears to be Boiled away).  Rice should be a little harder than normal cooking. Janice's Brazillian Cheese Puffs: pão-de-queijo

        yield: 12 Ingredients: 2 eggs ⅓ cup vegetable oil ¾ cup whole milk 1 tsp salt ½ cup mozzarella cheese (or mix of mozzarella and parmesan, cheddar, gouda or other melting cheese) 2 ½ cups polvilho doce (Brazilian sweet manioc starch) or tapioca starch 1 tsp baking powder Directions: Oil muffin tins to hold 12 queijos. Preheat oven to 435° F. Beat eggs, oil, milk, salt and cheese together in a blender. Add ½ cup of polvilho doce (starch) at a time to the egg mixture and beat well after each addition.  Use a rubber spatula to scrape the sides if necessary. Add baking powder and pulse 2 to 3 times to mix well. Divide mixture among muffin cups, filling them about half way.  The dough expands a lot when baking. Bake until puffed and golden brown. Frittata (Baked egg dish)

serves 4-6 This is an inexpensive and easy dish to make.  You can add whatever you have on hand – even leftovers.  It can be served any time of day as it’s great hot or cold Ingredients: 8 eggs ¼ cup water or milk Salt and pepper to taste Optional spices of your choice – be adventurous! Options: Cooked or raw vegetables (e.g. broccoli, spinach, peppers, tomatoes, onions, corn) Cooked meat or sausage Cooked rice or pasta Herbs (e.g. basil, parsley, cilantro, rosemary) Grated cheese Directions: Preheat oven to 375° F. Grease a casserole dish, cast iron frying pan, or baking pan; you can also select to line your pan with parchment paper for quick clean up. Sprinkle optional ingredients into your baking dish. In a mixing bowl, beat the eggs with a splash of water or milk.  Add salt and pepper (and any spices) and mix. Easy Savoury Strata

serves 4   Ingredients 6 large eggs 1 ½ cup milk (fresh or evaporated milk) ½ cup cream (or milk) Salt and pepper to taste Herbs and spices of your choice (optional) 3 handfuls chopped vegetables of your choice –e.g. zucchini, red pepper, mushrooms, spinach, broccoli 1 cup cooked meat or cooked beans (optional) – e.g. ham, chicken, black beans, lentils 2 ½ cups torn, stale bread (may include English muffins, bagels, baguette, sliced bread) ¾ cup grated cheese   Directions Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 6 cup baking dish with butter or with cooking spray.   Whisk the eggs, milk, cream, salt and pepper together in a large bowl. Add any desired herbs and spices.  Fold the vegetables, meat, bread and ½ cup of the grated cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese. Simple Bread Pudding

yield: 6-8 servings Leftover bread can easily be converted to dessert without much work. INGREDIENTS 2   cups milk 2   tablespoons butter + more for greasing pan 1   teaspoon vanilla extract ⅓   cup sugar   Pinch salt ½   loaf sweet egg bread like challah or brioche, cut into 2-inch cubes (about 5 to 6 cups) - any stale bread will also work 2   eggs, beaten     PREPARATION Heat oven to 350 degrees F.  In a small saucepan over low heat, warm milk, butter, vanilla, sugar and salt. Continue cooking just until butter melts; cool.  Meanwhile, butter a 4-to-6-cup baking dish and fill it with cubed bread. Add eggs to cooled milk mixture and whisk; pour mixture over bread.  Bake for 30 to 45 minutes, or until custard is set but still a little wobbly and edges of bread have browned.  Serve warm or at room temperature.  Yum!
