Lentil Burgers

This is a flavourful and easy-to-make meatless burger.  You can use any type of lentil although cooking times can vary. serves 8 printer-friendly recipe Ingredients: 1 ¼ cup lentils 3 cups water (less if you using red lentils) 1 cup onion, finely chopped 1 cup carrot, grated 3 cups bread crumbs 1 egg, beaten 1 teaspoon garlic powder ½ teaspoon oregano ½ teaspoon salt 3 tablespoons butter 1 teaspoon chili powder (or more if you enjoy the Tex-Mex flavour)   8 slices cheese (optional)  8 toasted hamburger buns Directions: Rinse lentils in colander.  Put into large boil with 3 cups water and bring to a boil. Lower heat, cover the pot, and cook for 15 minutes.   Add onions and carrots.  Cook lentils are very tender. Depending on the type of lentil you are using, these are the total cooking times: Green Lentils: 18-20 minutes Lentils de Puy: 25-30 minutes Brown Lentils: 20-25 minutes Black Lentils: 25-30 minutes Red Lentils: 12-15 minutes ...

Tuna Burgers

Burger Ingredients: 2 eggs 4 slices of bread 2 tins flaked tuna, drained 2 roasted red pepper, finely chopped 2 green onions, thinly sliced 2 tbsp finely chopped pickled jalepeno or cucumbers (optional) 12 cup grated cheese 2-3 tsp vegetable oil Sauce ingredients: ¼ cups plain yogourt ¼ cup mayonnaise 1 tbsp grainy mustard Method: Whisk eggs in a bowl.  Tear or cut bread into small pieces, then stir into eggs.  Set aside. Crumble tuna into a large bowl.  Add red pepper, green onions, pickles, and cheese. Mash bread mixture to form a paste, then  stir into tuna. Form ¼ cup of the mixture into a small patties about ½ inch thick.   Heat oil in a large frying pan over medium heat.  Cook burgers until golden and warm. Meanwhile, stir sauce ingredients together in a small bowl.   Serve tuna burgers with sauce. Enjoy! Notes: Feel  free to use stale bread in this recipe. Carrot and White Bean Burgers

  TRY THIS VEGGIE BURGER!  IT’S HEALTHY AND INEXPENSIVE. Ingredients: Olive oil 1/2 cup panko-style breadcrumbs 3 shallots, or 1 small onion, diced 1 tablespoon tomato paste 1 1/2 teaspoons kosher salt 1 cup packed grated carrot (from 2 medium carrots) 1 1/2 tablespoons apple cider vinegar Two 15-ounce cans cannellini or other white beans, drained and rinsed 1 large egg, beaten Freshly ground black pepper Burger accompaniments, as you like (e.g. tomatoes, lettuce, pickled onions, ketchup, mayonnaise)   Directions: Heat 1 tablespoon olive oil in a large skillet over low heat.  Add the panko and cook, stirring often, until lightly browned and crisp, 3 to 5 minutes.  Transfer crumbs to a large bowl,  and set aside.   Heat 2 tablespoons olive oil in the skillet.  Add the shallot or onion.  Cook until softened and lightly golden, 8 to 10 minutes.
