Japanese Carrot Ginger Salad Dressing

  Japanese Carrot Ginger Salad Dressing yield: 2 cups Get Recipe This is like the yummy dressing that you get at many Japanese restaurants. INGREDIENTS 7 ounces carrots (peeled and chopped )- about 3 medium carrots 4 ounces onion (peeled and finely chopped) – about 1 2 tablespoons ginger (peeled and finely chopped) 1 tablespoon granulated sugar 1/4 cup soy sauce 1/2 cup rice vinegar 1/2 teaspoon salt 3/4 cup organic canola or vegetable oil HOW TO MAKE JAPANESE CARROT GINGER SALAD DRESSING You will need a blender to make this salad dressing. Serves 4 – 6 Salad  ingredients: 6 carrots Handful of cilantro, leaves picked 4 teaspoons sesame or poppy seeds – toasted Dressing ingredients: Zest of 1 orange Juice of 1 orange Juice of 2 lemons Olive oil – measure orange and lemon juice and multiply amount by 4 2 tablespoons sesame seeds – toasted salt and pepper to taste Directions: Combine shredded or chopped carrots with cilantro and toasted seeds. Mix dressing ingredients, and add to carrot mixture. Can be served with extra lemon juice. Enjoy

Creamy Carrot Soup

 Ingredients ▢1 tbsp olive oil or butter ▢4 slices streaky bacon (~120g/4oz) ▢1 onion , chopped ▢2 garlic cloves , minced ▢5 large carrots , cut into 1.5 cm / 3/5" chunks ▢1 litre / 1 quart vegetable or chicken broth (4 cups) ▢1/2 cup / 125 ml cream ▢3/4 cup / 185ml milk (any fat %) ▢Salt and pepper SERVING: ▢Fresh thyme or chopped parsley ▢Cream , for swirling ▢Crusty bread Instructions Heat oil in a large pot over medium high heat. Add bacon and cook until golden. Remove from pot, cool then chop. Add onion and garlic into the bacon drippings. Cook for 2 minutes until onion is translucent but not browned. Add carrots and stir well to coat the carrot in the oil. Add broth, then stir. Cover with lid, adjust heat so it is simmering energetically (about medium). Ingredients: Olive oil 1/2 cup panko-style breadcrumbs 3 shallots, or 1 small onion, diced 1 tablespoon tomato paste 1 1/2 teaspoons kosher salt 1 cup packed grated carrot (from 2 medium carrots) 1 1/2 tablespoons apple cider vinegar Two 15-ounce cans cannellini or other white beans, drained and rinsed 1 large egg, beaten Freshly ground black pepper Burger accompaniments, as you like (e.g. tomatoes, lettuce, pickled onions, ketchup, mayonnaise)   Directions: Heat 1 tablespoon olive oil in a large skillet over low heat.  Add the panko and cook, stirring often, until lightly browned and crisp, 3 to 5 minutes.  Transfer crumbs to a large bowl,  and set aside.   Heat 2 tablespoons olive oil in the skillet.  Add the shallot or onion.  Cook until softened and lightly golden, 8 to 10 minutes. BY: Huy Vu INGREDIENTS ▢ 1/2 lb (226.8 g) daikon radish ▢ 1/2 lb (226.8 g) carrots     ▢ 1 tbsp salt VINEGAR SOLUTION ▢ 1/2 c boiling water ▢ 5 tbsp granulated white sugar ▢ 1 cup water ▢ 4 tbsp distilled vinegar INSTRUCTIONS  Peel daikon and radishes, then cut with mandolin slicer medium to small matchsticks. Smaller cuts will pickle faster. In a large bowl, sprinkle with salt evenly and toss to coat. Soak for 15 minutes.
