Easy cornbread

  Easy cornbread Yield: 1 – 9” pan Get Recipe Ingredients 1 cup all-purpose flour 1 cup yellow cornmeal ⅔ cup white sugar (or less)  1 teaspoon salt 3   ½ teaspoons baking powder 1 egg 1 cup milk ⅓ cup vegetable oil Directions Step 1 Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9 inch round cake pan or cast iron fry pan. Step 2 In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan. Step 3 Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.  Enjoy! Variations: You can preheat the pan or fry pan in the oven while you are preheating the oven.  Pour the batter into a hot pan and you will get a crispier crust. Add some jalapeno pepper slices and grated cheese to the cornbread.

  Pumpkin Bread yield: 2 loaves or 18 muffins Get Recipe Ingredients: 2/3 cup butter, softened  1 ½ to 2 ½ cup sugar (vary depending on your taste) 4 eggs 2 cups cooked, mashed pumpkin ¼ cup orange juice or water 3 1/3 cup flour ¼ cup wheat germ 1 tsp baking powder 2 tsp baking soda 1 tsp cinnamon ½ tsp nutmeg and/or ground ginger, cardamom 2/3 cup chopped nuts, raisins or dried cranberries Orange zest (optional) Method: Preheat oven to 350 degrees. Cream butter and sugar.  Beat in eggs.   Blend in pumpkin and orange juice.   Mix dry ingredients and spices together.  Add to wet ingredients.   Stir in nuts, fruits and zest if desired. Spoon batter into two greased and lightly floured loaf pans. Bake for 1 hour. Alternately, you can spoon batter into prepared muffin tins and bake for about 25 minutes. Enjoy!
