Pumpkin Bread

 Pumpkin Bread yield: 2 loaves or 18 muffins


Ingredients:

1 ½ to 2 ½ cup sugar (vary depending on your taste)

4 eggs

2 cups cooked, mashed pumpkin

¼ cup orange juice or water

3 1/3 cup flour

¼ cup wheat germ

1 tsp baking powder

2 tsp baking soda

1 tsp cinnamon

½ tsp nutmeg and/or ground ginger, cardamom

2/3 cup chopped nuts, raisins or dried cranberries

Orange zest (optional)





Method:

Preheat oven to 350 degrees.


Cream butter and sugar.  Beat in eggs.  

Blend in pumpkin and orange juice.  


Mix dry ingredients and spices together.  Add to wet ingredients.  

Stir in nuts, fruits and zest if desired.


Spoon batter into two greased and lightly floured loaf pans.

Bake for 1 hour.


Alternately, you can spoon batter into prepared muffin tins and bake for about 25 minutes.
