Ridiculously Simple Banana Bread

Ridiculously Simple Banana Bread                           yield: 1 loaf

This is a very moist and delicious loaf.  Buy bananas when they’re on sale and freeze the extras for this recipe; when they defrost, they’ll be conveniently soft and mushy.

Ingredients:

1 ¼ cup whole wheat (or all-purpose) flour

1 teaspoon baking soda

2 eggs

1/3 – ½ cup vegetable oil

1 cup sugar

2 ripe bananas, mashed

¼ cup chopped walnuts (optional)

¼ cup chocolate chips (optional)

Method:

Preheat oven to 350° F.

Mix flour and baking soda together in a large bowl.

Combine eggs, oil, and sugar in another bowl.  Mix mashed bananas, nuts and chocolate chips into the egg mixture.

Mix wet ingredients into the dry ingredients.

Pour into a greased loaf pan and bake for 1 hour.

Enjoy!

A wonderful way to use your ripe bananas!
