Garlic Soysauce Chicken

Ingredients

1kg chicken drumsticks, washed and drained 1 teaspoon salt

½ teaspoon ground black pepper

½ teaspoon minced ginger

¾ cup potato starch or corn starch 6 cups vegetable oil

2-3 cloves garlic, minced 3 tablespoons soy sauce 4 tablespoons honey

⅓ cup crushed peanut or sliced almond (optional)


Directions

Prepare chicken drumsticks

Make 2 to 3 cuts in the chicken drumsticks, but do not slice through. (That makes chicken cook 

fully to the inside.)

Put the chicken in a bowl and mix with salt, ginger and ground black pepper by hand.

Put ¾ cup starch in another bowl and dip each drumstick in the powder to coat it, one by one. 

Squeeze each drumstick to press the coating to it tightly.


Fry the chicken

Put  6  cups  of  cooking  oil  in  a  frying  pan  or  pot  and  heat  it  up  for  7  to  8  

minutes  over high heat.

See if the oil’s ready by putting a small starch lump  into  it.  If  the  oil  bubbles,  it’s  hot 

enough to start frying. Slide the coated drumsticks one by one into the hot oil and cook for about 

10 to 13 minutes, turning over a few times with tongs. Keep the heat medium.


Take the drumsticks out of the oil and shake them off in a strainer. Turn off the heat, and let the 

drumsticks sit for a few minutes.

Reheat  the  oil  and  fry  the  drumsticks  again  for  another  3  to  5  minutes  until  they  

all  look golden  brown  and  feel  super  crunchy  through  the  tongs.  If  your  frying  pan  or 

 pot  is  not large enough to fry all the chicken at once, divide it into batches.

When the chicken is done, make the garlic soy sauce.

Put  minced  garlic,  soy  sauce  and  honey  in  a  large  non-stick  pan  or  wok.  Heat  it  

over medium heat. Stir with a spoon and let it bubble for a few minutes.

After turn off the heat, add the hot chicken and mix well with a spoon to coat.

Transfer  the  coated  chicken  to  a  large  platter.  Sprinkle  some  peanuts  or  almonds  over  

top

and serve.

  Butter Chicken serves 8 Get Recipe Ingredients: 4 pounds boneless, skinless chicken breast  For the chicken marinade: 1 cup chopped onion 6 garlic cloves 1   1” piece fresh ginger 3 tablespoons lemon juice 1 cup plain yogourt 1 tablespoon ground coriander seed 1 teaspoon ground cumin 1 teaspoon turmeric 1 tablespoon sweet paprika 1 teaspoon garam masala 1 teaspoon sea salt For the sauce: 1 cup chopped onion 1  2” piece fresh ginger 4 cloves garlic ¼ cup vegetable oil 1 cup tomato paste 3 -4 cups water ¼ teaspoon cayenne pepper Sea salt to taste 1 cup whipping cream 2 teaspoons garam masala Put the chicken marinade ingredients in a blender or food processor; blend until smooth.
