Creamy Tomato Chicken Pasta serves 6
This easy dish combines canned (or
other) chicken and pasta sauce into a delicious dish that is topped with bubbly
cheese. It takes less than one hour from
start to finish.
Ingredients
8 ounces spaghetti or other pasta cooked
2 cups cooked chicken (canned chicken is convenient) shredded
1 onion chopped
1 clove garlic minced
¼ cup butter
¼ cup flour
1 cup chicken broth or water
¾ cup light cream or milk
14 ounces pasta sauce or canned tomatoes
½ cup parmesan cheese shredded
2 cups cheddar or other cheese divided
salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Cook pasta. Drain well and set aside.
- Cook onion and garlic in butter until tender. Add flour to the pot and mix; it will be lumpy. Cook 1-2 minutes. Stir in broth and cream, a little bit at a time until smooth. Cook sauce until thick and bubbly.
- Add pasta sauce or canned tomatoes to the sauce and mix.
- Remove sauce from heat, add parmesan cheese and 1 cup cheddar. Mix until smooth and melted. Season with season and pepper to taste.
- Combine pasta, chicken, and tomato cream sauce; mix well.
- Spread in a greased 9x13 dish.
- Top with remaining cheddar cheese and bake 25-30 minutes or until hot and bubbly. Enjoy!
