Zohrah’s Pasta and Qurma

This is a simple Afghani main course that uses canned kidney beans.

 

 Ingredients:

2 onions

1/2 cup oil

1 tsp saltPin on Health Tips

2 cans of kidney beans (rinsed and drained)

4 tbsp tomato paste 

2 cups water 

 

1 ¼ cup yogurt - 3 tbsp. per serving

2 cloves garlic

1 tsp dry mint

 

600 g pasta 

2 tbsp. salt

Large potful of water

 

Few spoons of heated oil to drizzle on top of each dish

 

 

Directions: 

For the Qurma:

First, slice the onions and put them in the pot with salt and oil. Saute them until the onions are soft. Second, add the tomato paste to the pot and stir for 1 or 2 minutes. Then, add water with beans and boil for 15-20 minutes.

 

After you cook the Qurma, make the yogurt sauce.  Crush the garlic and add to the dry mint and yogurt.  Combine and set aside.

 

For the pasta: 

First, boil the water in a separate pot. Second, add the pasta with 2 tbsp. salt.  Cook it as much as you want. I like it very soft .

At the end drain the pasta. 

 

To serve:

Put about 3 tablespoons of yogurt sauce on each dish.  Pile some paste on top of yogurt, then spoon bean Qurma on top.  Lastly, heat a little oil in a frying pan and pour a little on top of each dish.Unico Bean Cans Red Kidney 540 ML | Downsview Market

Vietnamese Tomato Salad

 Vietnamese Tomato Salad serves 4-6 This is a recipe by Anthony Ha and Sadie Mae Burns, and is from Bon Appetit.   Ingredients: ¼ cup sugar ¼ cup fish sauce ¼ cup lime juice 1 small fennel bulb, thinly sliced 1 Persian cucumber, sliced into half moons 1 green bell pepper 1 ½ pounds tomatoes, sliced into serving size pieces 2 cups mixed fresh herbs (dill, cilantro, and/or Thai basil) Black pepper 1/3 cup salted dry-roasted peanuts 1/3 cup store-bought fried shallots Method: To make the dressing, put sugar, fish sauce and lime juice into a lidded jar.  Shake and mix well. Combine vegetables and fresh herbs in a bowl.  Drizzle ½ cup of dressing and mix.  Taste and add more dressing if necessary. Place salad onto a place.  Sprinkle peanuts and shallots on top. Enjoy!

Campbell’s Tuna Noodle Casserole

A classic North American dish! 8 servings printer-friendly recipe Ingredients 2 (10.75 ounce) cans Campbell's® Condensed Cream of Mushroom Soup (regular or 25% Lower Sodium) 1 cup milk (fresh or canned) 2 cups frozen peas 2 (10 ounce) cans tuna, drained 4 cups hot cooked medium egg noodles 2 tablespoons dry bread crumbs 1 tablespoon butter, melted Directions Step 1 Stir soup, milk, peas, tuna and noodles in 3-quart casserole.
