serves 4
Ingredients:
2 medium zucchinis
2 tablespoons margarine or butter
2 tablespoons onion
1 clove garlic (minced)
1 teaspoon curry powder
½ cup light cream or evaporated milk
1-13 oz. can chicken (or vegetable) broth1 tsp curry powder
Directions:
Wash and slice zucchini.
Saute with onion and garlic in margarine.
Add curry powder & simmer. Cover for 15 minutes.
Blend in a blender.
Add cream and broth. Blend again.
Serve hot or cold.
