One bunch of kale will probably not be enough as these crispy vegetable chips are so yummy and addictive! Thankfully, they’re easy to make.
Ingredients:
1 bunch kale
1 teaspoon olive oil (or vegetable oil of choice)
Sprinkle of salt
Directions:
Wash kale with cold water.
Peel leaves off the stem, and rip into bite-sized pieces.
Dry well on clean tea towels. (You may even leave the kale to dry overnight.)
Preheat oven to 300° F.
Put two handfuls of kale with a few drops of olive oil and a little salt in a large bowl; toss to lightly coat the kale.
Place kale in single layer on baking pan. Do not overcrowd.
Repeat with rest of kale. You may need several baking pans.
Bake in preheated oven for 5 minutes. Rotate pan to another oven location so kale will bake evenly, and bake for another 5 minutes.
Take out of oven and enjoy!
