Bean Muffins
The beans will disappear when the muffins are baked, and no one will be able to guess what the “mystery” ingredient is.
Ingredients:
1 cup raisins
1 cup boiling water
3 eggs
¾ cup oil
1 ½ cup sugar (or less)
14 oz. (398 mL) canned baked brown beans
3 cups flour
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon (optional)
½ teaspoon baking powder
¼ teaspoon salt
1 cup chopped nuts (optional)
Directions:
Preheat oven to 350 degrees F.
Put liners into muffin tin or grease 2 loaf pans.
Add raisins to boiling water and set aside.
In a large bowl, beat eggs, oil, sugar, vanilla and beans. Add flour and remaining ingredients. Mix well.
Pour batter into muffin tin or loaf pans.
Bake muffins for 25 minutes. If using loaf pans, bake for 45 minutes.
