You’ll never get bored making muffins when you change the flavours!
Ingredients:
2 cups all-purpose flour or whole whole wheat flour
1 Tbsp baking powder
½ tsp salt
¾ cup sugar
1 egg
1 cup milk
¼ cup vegetable oil
Directions:
Preheat oven to 350° F.
In a large bowl, stir together the flour, baking powder, salt and sugar. Make a well in the centre.
In a small bowl, beat the egg with a fork. Stir in milk and oil.
Pour all at once into the well of the flour mixture.
Mix until wet and dry ingredients are barely combined.
Fold in the flavour variation of your choice. Do not overmix. The batter will be lumpy.
Pour the batter into paper-lined or greased muffin tray.
Bake for 20-25 minutes, or until golden brown.

Variations:
Fruit – add 1 cup fresh or frozen peaches, strawberries, blueberries, apples
Carrot raisin – ¾ cup shredded carrot and ½ cup raisins
Banana – 1-2 cut or mashed
Cheddar cheese and onion – ¾ cup shredded cheddar and ½ cup chopped green onion
Oatmeal – replace ½ cup of flour with 1 cup of oatmeal
Zucchini –1 cup shredded zucchini
Pineapple coconut – ¾ cup crushed pineapple and ½ cup shredded coconut
