Apple Chickpea All Day Salad

 

 This Fall apple salad recipe is sweet, tart, crunchy and packed with protein.  It is wonderful at any time of day!Overhead shot of single serving of fall chickpea salad.

Ingredients:

4 apples

¼ cup pumpkin seeds

¼ cup dried cranberries or raisins

2 cups of cooked chickpeas or 1 -540 mL can of chickpeas, drained

1 lemon

2 tablespoons balsamic vinegar (or honey and a little extra lemon juice or vinegar)

Sprinkle of cinnamon

¼ cup olive oil



Directions:

  • Wash and chop up apples (with skin on) and toss them into a 

  • mixing bowl.


  • Add pumpkin seeds and dried cranberries  (for crunch and sweetness.)


  • Add some chickpeas (for great protein).


  • Toss everything with a squeeze of fresh lemon juice.


  • For the dressing, combine balsamic vinegar, cinnamon and olive oil.  Pour over salad and mix.


  • Enjoy at room temperature or chilled!






This healthy salad recipe is packed with loads of flavour, textures, fibre and protein.

  • Have it for breakfast.

  • Add it to yogurt with a touch of maple syrup for a bit of added sweetness.

  • Pack it into containers, and lunch is ready for the week.

  • Have it as a snack when you get home from the gym or school.

  • Use it as a topping over ice cream for dessert.

  • Stuff it into a wrap for a delicious sandwich idea.

  • This is a perfect Thanksgiving salad recipe!

Vietnamese Tomato Salad

 Vietnamese Tomato Salad serves 4-6 This is a recipe by Anthony Ha and Sadie Mae Burns, and is from Bon Appetit.   Ingredients: ¼ cup sugar ¼ cup fish sauce ¼ cup lime juice 1 small fennel bulb, thinly sliced 1 Persian cucumber, sliced into half moons 1 green bell pepper 1 ½ pounds tomatoes, sliced into serving size pieces 2 cups mixed fresh herbs (dill, cilantro, and/or Thai basil) Black pepper 1/3 cup salted dry-roasted peanuts 1/3 cup store-bought fried shallots Method: To make the dressing, put sugar, fish sauce and lime juice into a lidded jar.  Shake and mix well.
