This Fall apple salad recipe is sweet, tart, crunchy and packed with protein. It is wonderful at any time of day!
Ingredients:
4 apples
¼ cup pumpkin seeds
¼ cup dried cranberries or raisins
2 cups of cooked chickpeas or 1 -540 mL can of chickpeas, drained
1 lemon
2 tablespoons balsamic vinegar (or honey and a little extra lemon juice or vinegar)
Sprinkle of cinnamon
¼ cup olive oil
Directions:
Wash and chop up apples (with skin on) and toss them into a
mixing bowl.
Add pumpkin seeds and dried cranberries (for crunch and sweetness.)
Add some chickpeas (for great protein).
Toss everything with a squeeze of fresh lemon juice.
For the dressing, combine balsamic vinegar, cinnamon and olive oil. Pour over salad and mix.
Enjoy at room temperature or chilled!
